It’s been a while…

Wow, I just realized it’s been like forever since I’ve posted anything. So I figured I would share with you guys a really yummy, healthy, quick and easy lunch! Now, I don’t know about you, but lunch is always super awkward for me because I never really know what to eat. I never want to cook chicken and salads don’t always sound appealing to me. So I usually end up eating left over from the night before or I make some sort of egg sandwich or omelette. Which those are all great, don’t get me wrong! I just get sick of the same thing everyday… So yesterday I was over at my friend Elizabeth’s house and she introduced me to the chicken burgers called Chicken Grillers. They are so freaking good and they come in a few different flavors. The best part about them is that they are all natural and are less than 200 calories. Although I don’t necessarily count my calorie intake throughout the day, I still am a little bit aware of how much I am eating compared to how much I am losing. Anyways, I went to Harris Teeter today and bought the Sweet Italian style grillers and the Caramelized Onion ones (this were the ones we had yesterday). I was so excited to come home and make lunch because any meat that is sweet Italian style is always the bomb.com. I cooked the burger on a skillet and heated up some leftover steamed broccoli from last night. I topped the burger off with a slice of muenster cheese and half of a sliced avocado. (As you can see in the picture, I didn’t use any bread and just ate it with a fork. But, feel free to add whatever toppings you like. Just keep in mind the toppings and bread will decipher the calorie intake as well as the overall “health factor” of the meal.)IMG_7728 It was freaking delicious and I got so full from it! But, my favorite part is that I don’t feel bloated or gross like I usually do when I eat normal burgers! Now, you’re probably thinking, “Kelsey, you said this was quick and easy. How am I supposed to cook all this when I’m at work ya doink??” The answer is simple, cook the burger the night before and whatever side you want with it. Put everything in a container or two and then just pop it in the microwave at work or eat it cold! Seriously you guys will love these things they are my newest obsession!

HEALTHY pancakes!

I made these ridiculously good pancakes this morning and had to share them with you guys. Like they were so good that when I took the first bite I literally said “there’s no way these are healthy”. And I’m the one who made them so I felt so silly for even saying that since I already knew everything that was in them. AND to make matters even weirder… I was home alone (insert crying laughing emoji here) haha yeah it was bad.. But anyways you guys have got to try these pancakes. They are super healthy, full of protein, and full of fiber, and barely any carbs!

Ingredients: two eggs, one banana, one tbsp of almond butter, one tbsp of chia seeds, and a dash or two of cinnamon. Blend all of that together until it forms a liquid batter. Heat a skillet on medium with some coconut oil and pour a normal size amount of the batter. Then just cook it like a regular pancake. This was really easy and tasted great. I didn't need butter or syrup either which was awesome because you can eat these on the go. I also didn't have time to eat them while they were still hot, so even after they had cooled down they still tasted so good! And, they were so filling I couldn't even finish them, but I did have 4 of them on my plate lol..

Crunch wrap remake

Hey everybody! I’ve been getting a lot of requests for the crunch wrap supreme recipe that Cameron made us the other night so here it is! Oh and did I mention it’s a HEALTHY version!? Yeah, it’s awesome I know…

Brown one pack of lean ground turkey and then mix it with one pack of taco seasoning (follow the directions on the back of pack). We used white tortillas because they didn't have big whole wheat ones, but you just need the large sized tortilla of your choices and flat rounded crunchy tortillas. And the following are optional but highly recommended for a better taste: salsa, plain nonfat greek yogurt, sliced jalpenos, shredded sharp cheddar cheese, refried beans or mashed black beans, and any other toppings you like. First place the soft tortilla on a hard surface and spread either the beans or greek yogurt across the top. Next place the hard tortilla down using the spread as "glue". Fill the crunch wrap with any toppings you chose including the turkey meat. Place another hard tortilla on top with either the beans or yogurt spread on the side facing up. Fold the soft tortilla across as if you are wrapping a present. Then just simply flip it folds facing down and cook on a skillet for about 3 minutes on each side or until desired crispness. And thats it! This was so yummy and so filling! But, keep in mind the tortillas you use, as well as the toppings will effect the overall "healthiness" of the meal.

I’m graduating college tomorrow….

It still has not hit me that I graduate college tomorrow! Like this is unreal.. I’m freaking out a little bit but then I remind myself I still have two more years of school since I’m getting my master’s degree. But I’m sure that will fly by just as fast! It’s been a crazy four years. Looking back on it, I’ve done so many things and gone to so many places and met so many amazing people. But, I could not have gotten through this past year if it weren’t for my wonderful friends and perfectly imperfect fiance! I am so blessed to have such beautiful and supportive people in my life so a HUGE shout out to you guys (you know who you are <3)

Anyways.. now on to the random stuff. I cut my freaking hair last week and this is a huge deal for me because I have literally never cut my hair besides a trim. I cut three inches off and got layers! You can see my pics on the left. I was so nervous when she started cutting that she actually had to stop and calm me down haha but I couldn’t be happier with it. It’s super healthy now and so easy to do! But enough of that… I made this crazy awesome breakfast the other day and figured I would share with you all since I’m all about the food! Then I just diced up a small avocado and sprinkled that on top. My bread is gluten free (not because I never eat gluten, just because I like the way it tastes and it stays fresh longer than regular bread) which I toasted and then spread a little bit of unsalted butter on top. This probably took me about 5 minutes total to make and it was so freaking good!

The stomach bug blows…

Hi everyone! It’s been forever since I posted last but that because I had a miserable stomach bug last week and was out for 3 days… It was horrible! I couldn’t eat or drink for almost two days and actually ended up in the ER on Wednesday because it was so bad 😦 I know poor me lol… But I finally started feeling back to normal on Sunday but decided to take it easy on Monday so I just got back to the gym today. And boy did it feel amazing! I went an entire week without going, and if you know me, that is way too long to handle… I felt like I was going insane just laying around. It’s weird because when I’m not sick and have so much to do all I want to do is watch netflix but when I am sick and forced to rest I HATE IT! I just get way too bored and antsy, I really don’t understand it lol. But anyways I didn’t eat the healthiest food over the weekend because I had no energy to cook and it was way easier to just eat whatever was around so yesterday I made it a point to refuel my body with great food. I made this super yummy and easy salad for lunch that I posted bellow, and it filled me up for hours! I used quinoa salad (basically just like pasta salad), two large handfuls of mixed greens, and a handful of seedless red grapes. The quinoa salad consisted of cooked quinoa, cherry tomatoes, diced red onions, feta cheese, black olives, and oil and vinegar.. Easy right?? And it was seriously so good and it super healthy. Luckily the dad I nanny for had made it the other day and he told me how to make it! But because I used the quinoa salad I didn’t need any extra dressing, which is awesome for me because I LOVE ranch haha. For a healthy afternoon snack I cut up an apple and dipped it in peanut butter, which is one of my all-time favorite snacks because its so good and healthy. And did you know that apples actually give you more energy than coffee? So if you are ever feeling a little tired and don’t want to have anymore caffeine, or if you just don’t like coffee, apples are a great way to get natural energy! Hello everyone !

This week I made a few super yummy, pretty healthy dinners that didn’t require very much work or time so I wanted to share them with you guys. I don’t have any nutritional facts though because I personally don’t count my calories, I just try and eat healthy with the occasional cheat meal (:

This took me about 5 minutes and it was soon good! The ingredients I used are in the picture below besides two large brown eggs. All I did was sautΓ© the tomatoes for about a minute until they were hot and then added the whisked eggs and seasoning. I scrambled the eggs, seasoning, and tomatoes together until the eggs were fully cooked. The rice and quinoa mix is microwavable so I just took it out and put the eggs mix over top and just mixed everything up with little bit of hot sauce. It was seriously so easy and so good!

Enchilada Chicken Nachos! Like holy crap it was amazing!! I know it doesn’t sound healthy but they honestly are not terrible for you.. I used two chicken breasts and put them in the crook pot with one small can of red enchilada sauce, half a can of rinsed and drained black beans, and half a can of mexicorn. I cooked it on low all day so for probably about 7 hours. Once I got home I just took a fork and stirred everything around and pulled at the chicken slightly and it just shredded itself. I also made a sour cream substitute which is that bowl of green cream. I used two individual sized plain nonfat greek yogurt, one large avocado, fresh cilantro, about 1 tbsp of chopped garlic, and lime juice and blended it all up to make the cream. You can add as little or as much cilantro and lime juice as you like; I didn’t really measure it out I just kept tasting it until I liked the final product. That probably took me about 5 minutes to make and I just kept it in the fridge all day until I got home. I also still have some left and it’s been two days and tastes just as good as when I first made it! Okay now onto the fun part, THE NACHOS! I used gluten-free blue corn tortilla chips (you can use any kind of chips though), I covered them with shredded sharp cheddar cheese and broiled them in the oven for about 1 minute. Next I topped it with the chicken mix from the crockpot, some salsa, some chopped green onions, and of course more cheese and put that back in the oven until the cheese was nice and melted. This was seriously amazing and it didn’t take long at all because i let the crock pot do all the hard work. If you were to cook the chicken on the stove or oven and shred it yourself, that would take way longer but you can do it either way! Feel free to add any toppings that you like and please let me know how they turn out if you try them!!

This was a baller desert I made that we ate with ice cream but thats obviously optional! All I did was heat up some coconut oil on a skillet and sliced two bananas and cooked them with some cinnamon. This was so freaking good and not terrible for you either as long as you don’t go overboard with the cinnamon. The coconut oil helps make a little bit of cinnamon go a long way as you see in the picture!

Chicken Enchiladas! So yummy! This one took a little longer but if I were to have utilized the crock pot it would have been way faster… You can pretty much use whatever ingredients you want but for these we used two chicken breasts, gluten-free nut-free tortillas (you can use any kind of tortillas you like, these are just a little bit lighter and healthier), black beans, mexicorn, chopped green onions, chopped fresh cilantro, shredded sharp cheddar cheese, chopped green chiles, one can of green chile enchilada sauce, some salsa, and the avocado cream I made the other night! We cut the chicken into small pieces and cooked it in a skillet with the green chiles and once the chicken was fully cooked we mixed it in a large bowl with the black beans, mexicorn, cilantro, and green onions. We scooped the mixture onto the tortillas and sprinkled in some cheese, rolled them all up in a glass dish, sprinkled more cheese on top, and then poured the can of enchilada sauce on top. We baked these at 400 degrees for about 15 minutes and then let them cool off for about 5 minutes. We topped them with the avocado cream and salsa and dug in! These were so good and so filling I couldn’t even finish them! I hope you guys like them!

Peanut Paradise Remake

Hey guys! I wanted to share with you this suppaa yummy smoothie/juice that I make at least once a week. So you know the peanut paradise at Tropical Smoothie? Yeah that’s my favorite one too! But it’s surprisingly pretty bad for you even if you ask for no sugar like I always do… So what I started doing is making my own at home for way cheaper and its sooo good for you! WOOPWOOP!! All you need is about 2 cups of water or almond milk, vanilla protein powder of your choice (I use the slender from protein world), one banana, 2 tbsp of almond butter, and one scoop of superfood,Β and as much ice as you want (more for a smoothie, less for juice). I also put glutamine in mine to replenish my muscles after working out! I hope you guys like this and let me know if you come up with any fun smoothie/juice recipes !
